I love food and cooking and wanted to share my recipes and experiences with fellow-minded people. I am no chef but enjoy good, hearty traditional fayre at home and the occasional treat away from home. I am learning all the time and this blog will hopefully see my skills improve over time. It is documenting my progress if you like and giving me some motivation to improve.

Comfort Food Thursday

So I've had a really hard day at work today and it's really getting chilly now so it was time for an old favourite comfort food recipe which is kind of cheating but so very tasty.  You chefs out there will turn your noses up but we love it.

Chicken and Mushroom Bake


For Two People:

2 Chicken Fillets, diced
I Can Condensed Mushroom Soup
Double Cream (don't be stingy, I probably used 100ml, maybe more)
1/4 Teaspoon Cayenne Pepper
Chopped Mushrooms (say 2/3 box)
Salt & Pepper

Mix the soup, cream and cayenne in a dish.  Put the chicken in an oven-proof dish, cover with the mushrooms, season and mix in the sauce.  Cover and cook at 200 degrees for an hour, stirring every 15 minutes.  Take the lid off and cook for another 10-15 minutes until browned.  Serve with fluffy basmati rice and vegetables.




Top tip:  Take the chicken and mushroom bake out of the oven at least 5 minutes before eating.  Also make sure you scrape the burnt bits from round the top and eat them before your other half realises :)




Not sure if I'll be updating tomorrow, I shall be out with a friend after work for drinks and I am not good cooking after a few drinks.  I have set my hair on fire in the past....  Might be take-away night.
