Hard day on Wednesday so was time for something a little exotic. Decided on a Thai green curry (Ken Hom's recipe, too lengthy to print) with some improvisation in ingredients. Haven't had chance to visit the Thai/Chinese supermarket in a while so used courgettes instead of Thai aubergines and threw some peppers in for colour. Not correct but still tasty.
We had it with steamed basmati and it was delicious.
Thankfully I had a brutal work-out at the gym on Tuesday in the form of 'Target Pump'. The instructor was an ex-marine and man, it certainly felt like a forces work out! I have barely been able to move since but no pain no gain. Means I can guzzle even more food so not a bad thing :)
Oh, and must correct an earlier post. I said I'd burnt off 650 calories during a run on the treadmill. The truth is, as I discovered last night in my Boxfit session, that I mistook kilos for pounds and entered the wrong weight - I certainly don't weigh 120 kilos!! What a div! It was probably more like 200 calories.
