I love food and cooking and wanted to share my recipes and experiences with fellow-minded people. I am no chef but enjoy good, hearty traditional fayre at home and the occasional treat away from home. I am learning all the time and this blog will hopefully see my skills improve over time. It is documenting my progress if you like and giving me some motivation to improve.

Very Proud Tuesday :)

I am very proud of my little self tonight, not only because I ran 9k on the treadmill last night and had a jacket potato with beans and salad for dinner, and then went to torturous Target Pump tonight but mainly because Mr W said he would have paid up to £15 for his dinner tonight :)  Now that is a proud moment, he is my biggest critic and oh so critical at times.  The girl done good!

I came home and had my post-torture bubble bath and had no idea what to cook for dinner.  All I knew was that it would be based around chicken fillets ( a tad boring at the best of times).  I toyed with a few ideas but none grabbed either of us and then I had a brainwave (rare pour moi, in a culinary sense anyway - I am quite clever, honestly!). 

I decided to batter out the chicken, stuff with cheese and pesto, and wrap in bacon.  I elected to serve this on a bed of spaghetti (I was craving pasta after two nights at the gym) with a tomato sauce. 

I cooked the chicken for 40 minutes on Gas 6 (200 degrees) and made a sauce.  I crushed some garlic cloves and fried them in olive oil for a couple of minutes before removing then added some finely chopped red onion, fresh chopped tomatoes, a tin of chopped tomatoes and some really finely chopped mushrooms.  I added a splash of vodka (no, not an alcoholic - it works very well with tomato sauce), some salt, pepper and sugar (I always add sugar to tomatoes in cooking), and some cayenne pepper for a little kick. 

I chopped some parsley for serving and have some lovely baby watercress in the fridge which I'd forgotten about at weekend and bought to garnish Mr W's birthday meal.  Not to worry, it got used tonight.  Unfortunately we can't seem to get hold of micro herbs around these parts for decoration so we've vowed to grow some next year.  Watch this space...

I cooked the spaghetti, added it to the sauce and gave it a good mixing, and sliced the chicken and laid it on top of a spaghetti bed.  It was fabulous, even if I do say so myself.  A true Tuesday triumph! :)  See for yourself....



Going to watch Masterchef now that we've recorded and tomorrow night I shall be dining at the Heaton's Tandoori with friend's.  I shall try to remember to take photos this time.
