Had such a boring day off today, probably because I was on my own and had some boring admin to do and a gym to join. Tied into the latter for a year so am hoping I can stay motivated. It's just a small one nearby, nothing fancy. I am just thinking about how much more cooking and eating I can do if I supplement my running with some more exercise :)
I started the day with poached eggs on toast. Unfortunately I seem to have misplaced the lead to link my phone to the PC so can't post a photo. I buy Old Cotswold Legbar eggs (Waitrose or Morrisons) which have the most amazing orange-yellow yolks as all good truly free-range eggs should have. Really wish I could post the photo to demonstrate but will have to wait until I find that pesky lead....
For lunch I had Mexican bean pate on granary toast - some good carbs before my late afternoon run. It's a really good one I found at Waitrose. I could happily be vegetarian for the majority of the week but alas Mr W could not and so we do tend to eat meat most days.
Dinner was leftovers from Sunday dinner which we very rarely do but I am fed up with throwing food away and always feel guilty so I have decided that until I can get my portions under control we shall eat as much of it as possible. The cauliflower cheese is still fab the day after and I cooked the beef in the gravy so it wasn't dry. Colin the cat was a big fan and will get the leftover beef and gravy for his next two meals (did you know most cat food has only 4% meat content?). My cats spoilt? Well maybe just a little...
I am missing being able to go into the garden or greenhouse and gather veggies for dinner. My husband and I grow quite a lot over the summer months but only have cabbages, carrots and beetroots left. It's too dark to see when we get home so will have to dig them up at weekend. I like to be as self-sufficient as possible but have had to resort to organic veg boxes until next year. I've found a good supplier and like the surprise element every week when I get home to see what they have brought. I made a nice colrabbi coleslaw after looking at one for a few days wondering what to do with it - it does make you think a bit more when you don't know what you're getting :)
I shall try to find that phone lead for next time....
