I love food and cooking and wanted to share my recipes and experiences with fellow-minded people. I am no chef but enjoy good, hearty traditional fayre at home and the occasional treat away from home. I am learning all the time and this blog will hopefully see my skills improve over time. It is documenting my progress if you like and giving me some motivation to improve.

Spanish Omelette Night

Made it to BLT tonight and could have done another session afterwards, despite my sore calves from 17k over the weekend.  Maybe I'm getting fit at long last!

I'd planned to do soup tonight that I made a few days ago - broccoli and cauliflower - so I put some bread rolls in the oven and heated it up.  However when I tasted it, it was pretty awful so back to the drawing board... :( 

All we had in the fridge in terms of meat was chorizo and bacon so decided to use both to make a Spanish omelette.  I chopped onions, chilli, garlic, peppers, mushrooms, chorizo and bacon, and par-boiled some potatoes which I sliced later.  I used a full box of old leghorn eggs (the blue shelled ones, amazing) and grated some mature cheddar. 

I fried the chorizo and bacon then added the onions and garlic.  I then added the chilli, peppers and mushrooms and fried them for a while before adding the potato (and a generous amount of butter, never tight with the old butter at Chez Watson).  Once cooked through, I covered in beaten eggs and let the eggs cook underneath.  A generous sprinkling of cheese then under the grill to finish off.  Delicious, but I defy anything containing chorizo to taste bad.  Not quite the healthy and quick dinner I was planning but a decent Monday night dinner.
