I'm a thirty something food-loving professional who has decided to write a food blog rather than bore my Facebook friends with my constant food updates and photos. I love food and cooking and wanted to share my recipes and experiences with fellow-minded people. I am no chef but enjoy good, hearty traditional fayre at home and the occasional treat away from home. I am learning all the time and this blog will hopefully see my skills improve over time. It is documenting my progress if you like and giving me some motivation to improve.

Macaroni Thursday

I was supposed to go to the gym on Thursday but it was freezing cold and all I wanted to do when I got home was cook some stodgy food and curl up on the sofa.  I decided to go for macaroni cheese, with some salad to make it a little healthier, and I needed to put some kind of meat in it (for Mr W) so went for bacon.

I made a cheese sauce with butter, flour, dijon, gruyere and nutmeg and fried some bacon until crisp.  I fried some onions in the bacon fat and added those, and cooked the macaroni.  I mixed it all in together, covered it in grated parmesan, and baked it for about half an hour at 200 degrees.  I put some sliced tomato on top before baking and added chopped parsley before serving. 

It was pretty special, even if I do say so myself ;)  Mr W and I both had the leftovers for lunch the next day at work.
