I'm a thirty something food-loving professional who has decided to write a food blog rather than bore my Facebook friends with my constant food updates and photos. I love food and cooking and wanted to share my recipes and experiences with fellow-minded people. I am no chef but enjoy good, hearty traditional fayre at home and the occasional treat away from home. I am learning all the time and this blog will hopefully see my skills improve over time. It is documenting my progress if you like and giving me some motivation to improve.

Mexican Monday

I went to BLT on Monday, which was a lot more hardcore than I'd imagined it would be given that the majority of the class are older than me.  Fair play to those ladies, they kept up better than me!  It was squats, lunges, crunches, using a heavy weight plate and lots of press ups.  I shall look like Pop-Eye soon if I'm not careful...

We had loads of chicken left over from the roast and rather than use it as fat cat fodder I decided to do something with it.  Mr W doesn't like 'old' chicken so had to come up with something that he would find acceptable and settled on fajita's.  I had some tortilla wraps in but no seasoning so decided to try making my own.  I knew that there was ground cumin, paprika and cayenne in the usual seasoning so just improvised until it tasted about right.  I used a chicken stock cube, crumbled, and also added a little water to make a paste and some tomato puree.  I was a bit worried it would taste awful but took the risk. It's not like we don't have any other food in the house if these things don't work out!

It was actually pretty good, a little more subtle than the stuff you buy but almost there.  Sometimes it's a bit over-powering anyway, the stuff in the packets.  I didn't have any sour cream either so just added some lemon juice to double cream and voila!  We always have salsa and jalepenos, and shredded some lettuce and grated some cheese.  I fried onions and peppers with a whole clove of garlic, which I removed once it had some flavour, and chucked the chicken in at the end. 

Nice easy dinner for a change, much needed on Monday.
